I often find myself exploring the latest fine dining establishments and culinary trends around the world. Not simply out of curiosity, but because I believe staying connected to what is happening globally is essential. I constantly research what is opening, what chefs are creating, and how concepts are evolving. Especially when I travel, I make it a point to visit a city’s leading restaurants. I embrace each opportunity as a chance to experience a true culinary journey and learn from those shaping the future of food.
That said, I do miss the hospitality upbringing I had in Australia. The energy of the scene. The pride in the plate. And above all, the incredible access to high quality local produce. Opening my own restaurants there allowed me to fully embrace this abundance. To build menus around what was fresh and in season, and to work closely with suppliers who truly cared about their craft. It shaped how I think about food and service to this day.
Having begun my hospitality career in the hotel industry for 10 years and then moving on to own and operate three fine dining restaurants in Sydney, two of which were awarded the prestigious ‘One Hat’ accolade, I’ve always been captivated by the passion and commitment that drive this industry.
The pursuit of excellence, the meticulous attention to detail, and the unwavering dedication to the culinary arts are what make fine dining truly exceptional.
I’ve been fortunate to see this industry from multiple angles; hotels, ownership, front of house and behind the pass, and I continue to be inspired by those who dedicate their lives to it. That’s why I decided to write this article. Not to lecture or list trends. But to reflect on the evolution of fine dining, to recognise the incredible work that goes into it, and to honour the people; chefs, sommeliers, service teams and creators who make it all possible.
The Evolution of Fine Dining
Fine dining has undergone a remarkable transformation over the years. It continues to honour its rich traditions but has also welcomed innovation with open arms.
Traditionally rooted in the classic codes of French gastronomy, many of the world’s most celebrated chefs trained with a foundation in French culinary techniques. Whether it be their vocabulary, plating principles, or brigade-style kitchen structure, this language of cuisine was universal.
Yet over time, those same chefs began to apply these methods to their own heritage, cultures and inspirations. Today we see extraordinary global expressions of fine dining, created with the same rigour but a completely different identity.
Recently I dined at A Wong in London, where Chinese culinary heritage was elevated with both depth and precision. At Lita, I experienced Mediterranean-inspired dishes that celebrated fire, simplicity, and finesse. At KOL, I was completely immersed in a Mexican experience unlike anything else technique met story, and every plate had meaning.
What connects these restaurants is not the cuisine itself, but the commitment to crafting something meaningful. To surprise, to educate, and to delight. That is the evolution of fine dining. It is no longer defined by borders, but by intent.

Behind every exquisite dish lies a symphony of effort, skill and passion.
From the moment the bread hits the table to the delicate amuse-bouche that teases the palate, nothing is left to chance.
Starters, mains, and desserts are not just courses, they are part of a greater narrative. I love dining in restaurants where you see the artistry unfold tableside. The final touches from the server. A palate cleanser that does its job so elegantly you barely notice it. And wine pairings so well chosen that each sip elevates the dish in front of you.
It is in these details that fine dining truly shines.
Chefs immerse themselves in constant learning. They read, study, travel, and innovate. They push boundaries not just in concept but in execution. And they do it all while working long, physically and mentally demanding hours. The kitchen is not a glamorous place, it is hot, relentless, and intense.
Yet they return day after day. Not for the spotlight, but because they care. Because they want to improve. Because it matters.

The service team plays a pivotal role in bringing the chef’s vision to life. The maître d’ orchestrates flow and energy with elegance and discretion. Sommeliers do far more than suggest a wine. It is the result of dialogue, testing, and fine-tuning between kitchen and cellar.
The service team are storytellers, guides, and guardians of the experience. Their presence should feel effortless, their knowledge instinctive. From pace to tone, from clearing silently to anticipating needs, their contribution cannot be overstated.
When done right, service is invisible but unforgettable. It elevates the food. It holds the space. And most importantly, it makes the guest feel something beyond satisfaction, it creates connection.

From beautifully simple Neapolitan pizza shops tucked down laneways, to creative taco bars and modern izakayas reimagining tradition, there is extraordinary energy across every level of dining.
These concepts bring joy, spark conversation, and inject vibrancy into their neighbourhoods. They are important. And they are a reflection of how much people love and live for food today.
Fine dining, however, sits in a different place.
It is not about how many sites can be opened. It is about how exceptional one experience can be.
It is not designed for scale, it is designed for intimacy. For precision. For emotional impact.
Fine dining comes in many styles, be it Italian, French, modern British, Chinese, Japanese, African and more. What unites them is not the cuisine, but the ethos.
